Exuding a true sense of place, this still Pinot Noir is created from fruit specifically selected for its maturity and concentration. This wine has a wonderful ruby hue and displays a cornucopia of forest fruits on the nose, with notes of black cherry, raspberry and blackberry, interwoven with some earthy and smokey tones. The ripe Black Forest flavours continue on the palate with complex nuances of spiced pepper and sandalwood, plus a playful sweet touch of nougat. It is perfectly balanced with an elegant structure and silky tannins, leading to a lingering, textured finish.
Grape Variety: 100% Pinot Noir Alcohol: 13% Vol Harvesting & Vinification: A blend of low yielding Burgundian Pinot Noir clones (777 and 115) were picked during the 2025 harvest. Once in tank and inoculated, the grapes were gently pumped over twice a day for a period of two weeks. A component of the blend was vinified using the traditional technique of pigéage (punch-down). Malolactic Fermentation & Ageing: Once the primary fermentation was complete, the wine was drained off its skins into old (80%) and new (20%) French and American oak barrels, where it underwent malolactic fermentation. After nine months ageing in barrels, the wine was lightly filtered and bottled in May 2026.
