Grape Variety: 100% Pinot Noir Alcohol: 12.5% Vol Harvesting & Vinification: Carefully picked Pinot Noir grapes were pressed and cold settled for 48 hours prior to racking. The juice underwent a long and slow fermentation in stainless tanks using aromatic yeasts. Secondary Fermentation & Ageing: This wine went through malolactic fermentation and spent time on yeast lees to build palate weight, before bottling in spring 2023.
