Tasting Notes

With a golden hue and a fine, persistent bead, this wine has luxurious, pâtisserie and stone fruit aromas. On the palate it shows precision and poise, with notes of honeyed apricot and toasted nuts with a trace of elegant salinity. This is perfectly married with hints of frangipane and wonderful savoury nuances. It is deliciously dry and has a smooth, elegant finish.


Technical Details



Grape Variety: 100% Pinot Noir

Alcohol: 12.5% Vol

Harvesting & Vinification: 

Grapes from Burgundian Pinot Noir Clone 115 were carefully harvested during October 2021. We use this particular clone to create a more full-bodied style owing to a slight accentuation of tannins, developing into a more luxurious mouth-feel.


Secondary Fermentation & Ageing:

The base wine underwent malolactic fermentation and spent three months in tank and barrel (20%) ageing on light lees. After a series of tastings, the wine was blended, filtered and bottled to obtain the ‘prise de mousse’. Following the bottle fermentation, the wine spent twenty-five months ageing on yeast lees prior to disgorgement, followed by twelve months ageing under cork.

"Attractive cooked apple and patisserie nose with an umami note. The palate is broad, nutty and savoury with a fine, elegant mousse enlivened with lemon and red apple. The finish is long and sapid showing weight and intensity making this a superb sparkling wine to partner white meats, stronger flavoured fish dishes and cooked seafoods as to make it a great wine to place on a tasting menu. It also has a capacity to age and evolve over the next 3 to 4 years, increasing complexity and integration."
