With a golden hue and a fine, persistent bead, this wine has luxurious, pâtisserie and stone fruit aromas. On the palate it shows precision and poise, with notes of honeyed apricot and toasted nuts with a trace of elegant salinity. This is perfectly married with hints of frangipane and wonderful savoury nuances. It is deliciously dry and has a smooth, elegant finish.
Grape Variety: 100% Pinot Noir Alcohol: 12.5% Vol Harvesting & Vinification: Grapes from Burgundian Pinot Noir Clone 115 were carefully harvested during October 2021. We use this particular clone to create a more full-bodied style owing to a slight accentuation of tannins, developing into a more luxurious mouth-feel. Secondary Fermentation & Ageing: The base wine underwent malolactic fermentation and spent three months in tank and barrel (20%) ageing on light lees. After a series of tastings, the wine was blended, filtered and bottled to obtain the ‘prise de mousse’. Following the bottle fermentation, the wine spent twenty-five months ageing on yeast lees prior to disgorgement, followed by twelve months ageing under cork.
