Technical Details

Grape Variety: 40% Pinot Noir, 30% Chardonnay and 30% Pinot Meunier

Alcohol: 12% Vol.

Harvesting & Vinification: Grapes from Chardonnay, Pinot Noir and Pinot Meunier vines were picked separately over a two-week period. Each variety was fermented individually using a selection of different yeasts.

Secondary Fermentation & Ageing: All components underwent malolactic fermentation and spent three months in tank ageing on light lees. After a series of tastings, the three varieties were blended, filtered and bottled to undergo the ‘prise de mousse’. Following the bottle fermentation, the wine spent at least twenty-four months ageing on yeast lees prior to disgorgement.

Reviews

“This elegant fizz is a beautiful expression of one of sparkling wine’s finest terroirs: the chalky soils of eastern Kent.”

David Williams, The Guardian

"The palate reflects the nose with yellow apple, umami, toasted bread and roasted nuts with a lick of acidity keeping it fresh and vibrant. Balanced, long and dry. A wine to savour, pleases the palate, delivers complexity. An aperitif to savour, a good partner for foods such as chicken and morel, or mature soft cheeses."

Clive Barlow, Master of Wine
