Created from Estate grown Pinot Noir, Chardonnay and Pinot Meunier grapes, our Classic Method Classic Cuvée is the epitome of English elegance. Pale gold in colour, with a delicate mousse, it has a delightfully fresh nose with notes of crisp green apple and flint. These flavours are amplified on the palate, which has linear precision and impressive structure and length.
Grape Variety: 40% Pinot Noir, 30% Chardonnay and 30% Pinot Meunier Alcohol: 12.5% Vol. Harvesting & Vinification: Our Chalklands Non-Vintage Classic Cuvée is crafted from a blend of specially-selected base wines from three exceptional years. During each respective harvest the grapes from Chardonnay, Pinot Noir and Pinot Meunier vines are picked separately over a two-week period. Each variety is then individually fermented using a selection of different yeasts. Secondary Fermentation & Ageing: All components undergo malolactic fermentation and spend 3 months in tank ageing on light lees. After a series of tastings, the wines are carefully blended, filtered and bottled, ready to undergo the ‘prise de mousse’. Following bottle fermentation, our Chalklands NV spends between 12 -18 months ageing on yeast lees prior to disgorgement.
