To celebrate the Great British Rosé Week, which gloriously coincides with the reopening of hospitality and the return of the sunshine, we are delighted to share this delicious pairing to bring some joy and inspiration to your al fresco soirées this season.


It is the perfect match for our newly released, Railway Hill Rosé 2020. This beautiful Provencal-style English rosé is created from 100% estate-grown Pinot Noir. Its delicate bouquet and attractive colour capture the essence of summer.

The PIG at Bridge Place is located a stone's throw from the Simpsons' idyllic vineyards, nestled in the Kent Downs Area of Outstanding Natural Beauty. 


It is a dream come true to be able to work so closely with the team at this beautiful boutique bolthole, making for a decadent weekend escape, especially when combined with a Tour and Tasting Experience at Simpsons'.


The PIG's ethos focusses on celebrating life and revelling in epicurean delight, whilst championing home-grown and seasonal produce, with their kitchen garden and 25-mile menu. This year The PIG Hotels were applauded for their Green Initiatives, a new sustainability listing in the MICHELIN Guide


As The PIG Hotels reopen their doors and Simpsons' begins its 2021 visitor season, we would like to bring a taste of this picturesque pocket of the Garden of England to you. 


We have paired our much-adored Railway Hill Rosé 2020 with The PIG's iconic flatbreads, which can be enjoyed in the glorious garden setting of the Bridge Place establishment when you stop off on your way to Simpsons'...

Ingredients

Makes 6 - 8 Flatbreads

  • 300ml warm water
  • 5g fresh yeast
  • 8g sugar
  • 10ml olive or rapeseed oil
  • 540g '00' flour
  • semolina, for dusting
  • 800g chopped tomatoes blitzed with dried herbs, 2 garlic cloves, salt and pepper 
  • seasonal toppings of your choice



METHOD

Using a mixing bowl, or a food processor with a dough hook attachment, mix half the water with the yeast, sugar and oil. Then add half the flour and mix to bring all the liquid together.  


After 1 minute of mixing, add the rest of the water and flour. Mix for 5 minutes until it's all combined to form a smooth ball of dough, then cover and rest for 30 minutes. 


Put a pizza stone or baking sheet into your oven, set to its highest temperature. Divide the dough into 6-8 equal pieces and form into balls. 

Dust your work surface with semolina and roll the balls of dough into flat rounds to a thickness of your liking; the thinner the dough, the crisper the flatbread base. 


Blitz the chopped tomatoes dried herbs and 2 garlic cloves together to make a quick yet delicious base sauce. Spread on your flatbreads and add cheese, if using. 


Quickly sprinkle the pizza stone or baking sheet with semolina, put the flatbreads on it and bake for 8 - 10 minutes. Scatter with toppings of your choice. 


Serve with a glass or two of chilled Railway Hill Rosé. Enjoy!
